The Birthday girl is getting so big! I love her to the moon! As my baby has grown so has her taste.... Lol! A "baby" cake was out of the question! She loves my from scratch chocolate mayo cake, and mint ice cream! Hmmmm!
We spent a little time experimenting! Here is the Ab approved.... mint buttercream frosting we finally settled on! Be careful! I now have orders for Moose mint chocolate cuppies! It's that tasty! Fresh ganache for extra chocolate goodness! I tried polka dots for the first time in the interior of the cake! Turned out cute, but now I know what to do better next time!
Moose Mint Buttercream
1/3 cup unsalted butter softened (not melted)
1/3 cup salted butter softened
3 tablespoons heavy whipping cream (add more as needed)
3-4 cups powdered sugar (add more as needed)
2 tsp pure mint extract
green food coloring
2 cups Ghirardelli's semi sweet mini chips
Cream butter, mint, food coloring and heavy cream together. Gradually add the powdered sugar until the desired consistency is achieved. With a wooden spoon gently fold in mini chocolate chips! Pipe onto cooled cupcakes or cake!
